Texture Bug

i just got a problem with the texture pack where i can see my heart and blue orbs as a hunger bar. the only thing i did was login using up to date fabric and a mod to allow me to scroll to look at tooltips on items because i don't want to make my gui scale 2 every time i want to read what an item with 7 lines of lore text does just to turn it back to gui scale 3 because I can barely see my hotbar. i went back to vanilla after seeing the bug and now that's borked too. is there a way to fix this like a command to reset textures or something?
Edit: The text on players names and floating text are doing this now. i have no idea how a simple scroll mod did this
Edit 2: ok so now my horse will slowly come to a stop when hold down one direction unless i spam my jump, sprint or other direction keys. i could understand the textures but i've got no idea how this happened. is any of this normal?
