For a couple of months now I’ve had this, in my and many others’ opinions, amazing Mac N Cheese recipe which has only existed in my head…

Up until just a few minutes ago, of course.

I finally decided to sacrifice a few ingredients to make a replicable recipe, for me to easily use with consistent results, and to share with the world.

Now, with a fair bit of warning, this recipe can end up being somewhat expensive for a simple dish of Mac N Cheese, and is incredibly ingredient heavy for what it is. Meaning you may not want to make it until I get the perfect recipe, or simply just because it is too expensive. (To give an idea of how expensive it is, the three cheeses I use can cost close to 12 US dollars in total, and the spices can also be a pretty penny if you don’t have them).

That being said, this first version, however, came out decently well to what I have in my head, and will only require a couple small adjustments in the future.

Without further ado, here it is:

    Ingredients:
    2 cups pasta
    2 tablespoons butter
    2 tablespoons flour
    1 1/2 cup milk
1 1/2 cup extra sharp cheddar cheese
    1/3 cup Gouda cheese
    1/2 cup gruyere cheese
    1/2 tsp cumin
    1/2 tsp garlic powder
    1/8 tsp ground nutmeg
    1/4 tsp Worcestershire sauce
    1/4 tsp cayenne
    1/2 tsp paprika
    1/2 tsp cajun
    1/4 tsp salt
    1/4 tsp black pepper

    Making:
Step 1.) Fill medium pot with water and bring it to a boil, after this cook your pasta until aldente as directed on the box.

Step 2.) Drain the pasta and then brown the butter in same the pot over medium heat.

Step 3.) Add flour and stir until smooth.

Step 4.) Pour in milk 1/4 cup at a time, stirring until smooth before pouring in the next 1/4 cup. After all milk is in, stir until smooth.

Step 5.) Add in the extra sharp cheddar cheese, Gouda cheese, and gruyere cheese. Stir until smooth.

Step 6.) Add in cumin, garlic powder, ground nutmeg, Worcestershire sauce, cayenne, paprika, cajun, salt, and black pepper. Then stir until all spices are dispersed evenly.

    Step 7.) Serve and eat.

If you’re on a budget you can substitute the Gouda and gruyere cheeses for the equivalent amount of extra sharp cheddar cheese, which would probably save close to 8 US dollars.

Keep in mind that this is a prototype, and might taste a bit funky, but is still decently good in this state.

    Have fun.

Finally someone else who sees the wisdom in putting Cajun seasoning in their mac 'n' cheese. It's just better that way.
