The main problem with people getting money via quests is that instead of taking away other's people money that is already in circulation which is exactly what happens when you trade, They "Create" new money, Which is exactly how inflation happens, Basically lowering the worth of LE as time goes.
It would be a profitable way sure, But if enough people keep using it eventually that 25LE is not going to be worth shit.

If you're asking what the game does to negate inflation the answer is making money sinks, Such as the Powder Master or Potion Merchants, Those basically take away player's money out of circulation and "Delete" it, It helps lower the amount of inflation in the game but certainly not enough in Wynn's case.
Though if you mean what to do instead of Questing or Diving in Seavale, I would most likely loot running and trading because:
1) It's the most profitable way if you don't have about 18 free hours every single day.
2) It minimizes your personal "Footprint" on the economy.

remember we going per hour.
for a 12 hr day lootrunning will give you 48LE according to this.
