Now just a few hours won't do it, but practicing something a bunch can extra add proficiency to it.

I think it typically takes 255 days of work to gain a new proficiency? I may be wrong tho, I don't have the PHB or DMG on me

(Also you could have just realized that it was daytime during the fight since you used sunlight again the dragons, so it could not still be morning after a long rest)

I actually have an enemy in mind, and I learned from a previous campaign how annoying they are to fight (not hard, but annoying. Low damage, low health, high AC)

So basically, they deal no damage and die in 2 hits... But you have a really now hit chance? What about an enemy with an AC of 18 and has 150 HP... but deals 1 damage per hit and has a -5 modifier on 'to hit' rolls and does 1 damage and a special ability that makes it impossible to retreat?

And there is kind of something like that? The flail snail is an elemental with high hp, ac, and damage. But it can retreat into its shell which shoves it's ac through the roof, but can't attack

I said 1 damage because that causes the fight to take about a year since it can hardly damage you but you can hardly damage it. Ironically, the lack of attack power makes it more annoying. Too bad something exactly like that doesn't exist (If it did, it would probably be the first enemy I'd give the players if I DMed a campaign).
