You don't have to make hexes, it might be easier to make a circle that would serve as an area I can cast things in if I were to cast a 30ft range spell.

 

The creature(s) must be within 30 feet when you cast it, but after that they can leave the 30 ft range.

 

But, anyone who enters the new field has no chance of getting the spell?

It says "you and each creature you choose within 30 feet of you" so no, only creatures in the field when you cast it

 

Out of curiosity, I creep forward a bit, take out a copper coin, and cast Light on it. I toss it in the general direction of the shadow beast.

The coin radiates bright golden light in a 20 ft radius and dim light in another 20 ft radius.

The beast dislikes the light, and keeps moving away from it (yes, I'm actually moving the beast around). But the light seems to have no visible effect on the beast.

So, once the beast passes my aisle, I slowly and stealthily trail it, zipping into Ti'Lin and Alice's aisle when I get there.

Loud? Assuming I don't fail this roll miserably, barely loud.
Smelly? Well, I haven't explicitly stated that I've bathed in the last few rests, but Caligo usually does.

Can I cast Minor Illusion this turn as well to make an illusion of myself down at the bottom of the map?

The spell description does not actually state that. And when I played a Shadow Monk, I used minor illusion to make copies of myself, so I'm not gonna say no to Caligo doing it. (he actually asked me beforehand if he could make images of himself, I said yes)

 

It says image of an "object", not a "creature".
