Feel free to tell me about Warrior in this case as well, I assume it's uppercut because of how difficult it is to maintain a melee playstyle in this altar
Yeah, his hpr is a pain in the ass for Assassin/Warrior because of how annoying it is to maintain a constant damage uptime with either of them against a man with a literal gun. My tactic was the same as yours, i.e vanish+multi-hit hit and run.
However, I didn't run into a problem with the sprint bar because Luke's aggro range is hysterically low, in fact it's so low to the point where even Mage meteor can safely outrage it.
As a result of that, I would just run over to where he was, burst him very quickly with vanish+multi (and maybe throw in a spin if I think he's going to try and get a cheap hit on me or smoke bomb if I don't think he's going to try charging anytime soon), and then vanish again and run over to the complete opposite side of the arena to wait for my mana to regen. A boring and more or less cheese strategy, but it works.
Alternatively, you just would need enough walkspeed to strafe his melees or enough mana to spam spin if you wanted to be in his face the whole time. I don't know the exact amount off the top of my head, but generally speaking you need around 40-60% walkspeed to dodge most attacks in the game (mostly referring to circle strafing in that regard).
This is decently hard to pull off while still getting relatively good melee or spell dps at this stage in the game, but it's manageable if you go something like raw melee stacking Killij.
Jawbreaker/Zweihander can work, but you have to play cautiously with them due to Rymek Luke taking a pretty high amount of negative kb (treat these both more like heavy melee playstyles, and honestly if I got more used to his negative kb this would probably be the most optimal due to supporting hit and run at such a low mana cost).
As for Warrior, you are correct in assuming that uppercut spamming is the way to go. Don't even bother trying to uppercancel, as you'll probably not have enough sustain to do so and his negative kb will make him fly into you anyways.
You don't even need to strafe that much since uppercut makes him miss a lot of his shots, and you can always charge away if you feel like one is about to hit you or you sense him getting ready to use a storm. Pretty much any spell spear will do here if you stack mana regen with it (Karma, Fierce Thunder, etc.).
If you do ultimately decide to go melee despite this, then you have one of two options: go a walkspeed setup as said earlier or stack defense to a comical degree and then chug pots in front of him. The latter does not have enough damage to get through his hpr without trading, and we both know that trading with Luke for an extensive period of time is not going to end well.

Reporting back, pulled out my Influence and got him down. I am planning not to get Hashr Claw and instead try making a similar fire build to the one you made in your magnum opus video; just to make my experience a lil more fresh
To be quite honest, I have had many videos planned and created, but they have all just been scrapped. As of right now though, I don't really have any motivation to make a video, that is until linny makes his ironman btw guide.
