Actually, we're made of more neutrons and electrons than protons...

But protons are the only thing that can define an atom.
An atom loses a Neutron and it's still that same atom, just lighter, it can still make the same compounds, but they're lighter.
An atom loses an electron and it becomes an ion, still the same atom, just a different form.
Protons are the major defining force of the atom.
