Just get Civ VI - even if the graphics look like they were pulled out of somebody's excretement, the game mechanics look pretty amazing.

i've been told to get eu4 but Im not sure if my poor mac pro can handle it, let alone civ 5

EU4 is harder in my computer than Civ V

It is harder on a computer, tbh. The fact that I suck at the game doesn't help...
