It lands on its side.

Fictionally I'd assume, it'd land with the cat on its side. However the toast wouldn't necessarily make a difference because the cat has more mass. Such a philosophical question. :p

I came up with a possible solution. Why does toast always land butter side up?

Butter likes to faceplant itself into the ground.

No seriously, it's because the butter has weight, so due to gravity, the butter faceplants itself into the ground.

I think about it this way. The toast is buttered on both sides, one with butter, and one with cat. Therefore, it will land on the side where the spread is heaviest, namely, the cat side.
