Add more unique merchants to towns. Not useless ones, like potato merchants and whatever, but actually fun ones. Like, Rodoroc, for example, has an ENTIRE bazaar, and the only time it's used is in a quest...? Make NPC item trading an actual thing, like have trading merchants that could give you unique items for certain materials or ingredients, probably area specific. Also, in big cities with a lot of trading, add some actual traders to all those empty, deserted marketplace stalls-they don't just have to be for decoration. Have some people who could sell special weapons, or special armor, or cool gadgets or trinkets. Almuj could use some of this. There's, like, at least 5 empty marketplace stalls, probably more, that are lacking use. Maybe you could put some people in them?

For trinkets I actually would like for there to be more of them added but I also prefer that they stay hard to obtain and not just buyable from a trader. They should be earned from accomplishments, not just trading with an NPC.
Sure, there are NPCs that give you a special piece of equipment by trading in a long quest's reward or otherwise doing something difficult like Qira Hive (well... difficult back then anyways), but those aren't usually chilling in a bazaar.
Personally, while I do ordinarily advocate for making towns feel more alive, I just don't see how so many interactable traders can exist and have them offer something worthwhile unless we're giving them massive convoluted trading chains that aren't fun to interact with. It brings to mind the trader NPCs in CrossCode which are very obvious parodies of that exact idea (since the game's setting is a parody of MMO games).

Maybe we could have some merchants that buy/sell ingredients similar to the confectioner in Letvus Airbase, but they also buy ingredients that may be rarer so you don't have to rely on the trade market to buy your stuff or just quick trading your whole pouch :)
