I can not tell you how many times this has happened to me, yes, we should fix this

 

If it really isn't possible, Why not make an easier way to turn LE into EBs and EBs into emeralds?
So you don't need to travel from place to place and do it.
(Not many know but this was tried a few months ago with the command /deposit but I believe people found a way to abuse it and it was removed quickly).

I've always found this problem a little bothering at times because I can't convert emeralds
all the time depending on where I am, I agree that this should be changed. Maybe its
in case your inventory gets filled up more and you might lose emeralds if they auto convert?

A solution is to donate me all that le and I'll convert every stack into 16e and you can buy some scrolls

 

And when we do this developers need to make sure the converted emeralds won't disappear because of full inv.
(Drop them on ground or just don't allow players to trade when their space is not enough?)
Well I'm sure 99% of players would want this feature.
