I think profession levels being class-specific is not really justifiable given how much of a grind it is to level them on even one class. There's some theoretical gameplay reason for it, mainly on Ironman and Craftsman classes, but in practice they suck and making them global would alleviate some of that. (My main suggestion on alleviating the profession grind remains 'massively reduce XP requirements at the middle and late levels', which wouldn't alter the endgame economy of profs much, although it would bring a lot of new gatherers in, presumably.)

(Also, as an aside: is it true that the profession system was specifically designed to be a long grind?)

i mean they could just give +100% xp and speed before Lv. 80 profs and that'd solve a lot of stuff and have professions progress like Lv. 30 profs, where i mine 12 nodes, i level up, not i mine 50, i am now at 50% yay

To be honest, I think from 50 to 80 the XP requirements should be reduced by 70%, because during the triple XP weekend I decided to prof somewhat and it was actually reasonably fun... at triple XP with a maxed +XP charm from TNA (I actually had like 8 but I think they don't stack which is very sad), and sometimes pushed up to x8 cumulative leveling speed by prof XP and speed bombs being active from whales doing prof leveling. So that gives you something of a benchmark.

Double speed would disrupt the prof economy, which is why I didn't suggest it. Slow mining of individual nodes would be tolerable if the XP gain was significant.

The amount of Decay grains I have. And I'm only halfway through to the next crop. Started at level 10ish in farming and went to 75 over the course of a day for my mounts. Now delegating that to after I finish Corkus/MoltenHeights/Sky Islands then SE then Fruma. Would very much like a reduction in XP reqs or an increase in yield
