Where'd you get the max level 125 number from? As far as I know Fruma will extend the level range to 120 at most. It could also go up to 110 instead.
Besides, armor textures change every 20 levels, so starting from lvl 121 armors wouldn't use Netherite anymore

Ability points speculation. We know that the devs would not max out ability points at an uneven number, and 50 seems perfect. so, getting 20 more levels for 5 more ability points is the most logical, thus we are getting 20 more levels instead of 15.

As for the armor at 121, you can simply increase the cap to 125, its the last set why would it need to have only until 121, its free real estate

I dont really think netherite is the interesting part. The interesting part is all of the different netherite trims on armor pieces.

With how trims work, there are enough combinations to make almost every armor piece look unique. I 100% support netherite trims, but adding netherite itself seems like a missed oppertunity when its just +1 armor version instead of hundreds.

wynncraft uses 1.20.2 now, at least on the public side, although idk if that means they can use items from 1.20.2

I remember hearing, somewhere, from a CT or something, that they were thinking Fruma would be 120-125 levelwise.

Good to have actual confirmation that it's 120. (I really really hope that you all fix earlygame and endgame leveling with Fruma, though, I don't want to be dealing with Silent Expanse leveling for another 15 levels.)

...Armor trims... that's a thought. I also remember hearing, somewhere, from a CT or something, that parts of Wynn are still running on 1.8, but if you could update to a version late enough to use armor trims, they could be useful for armor? Maybe not. I reckon they're just too Minecrafty, considering Wynn is aiming to be its own thing nowadays. I don't know how they work, but maybe they could be used as the basis for some armor customisation system or something? I don't think they're really necessary, although I do wish armor cosmetics for non-helmets existed.

The highest it could be is 120. Salted stated this in a post about Fruma's development

I think if you were to retexture the trim patterns you could effectively have each one be a whole new armour texture, however, the amount of trims is very limited, which robs them of a lot of use cases.

If I understand Minecraft's pack format correctly, the amount of armor trims is actually unlimited, and one can add an unlimited amount of them with datapacks.

Well that would be an interesting way to add in armor customisation, if true.
