I’ve recently finished an assassin playthrough, and I am saving for some mythics like Cata. Question is, what do I do next? Do I start a new play through, tome max my classes, or other stuff?

Assuming you haven't already maxed out all professions. You could do that as a goal for one of your playthroughs, and have the character be a dedicated crafter for newer play throughs. To customize gear to your tastes. Though you could also work on making a nice looking house if you haven't done that as well. Otherwise you could go for an archer run as I find playing archer fun.

I recommend a second playthrough, especially if it's been a while since you were low-leveled!

I forgot to mention this but I have done five playthroughs. I’m currently deleting my shaman so I can get another slot
