Skill Points

I've heard that skill points can only go up to 80%, how many skill points does it take to get there?

 

147 points = 80.0%.
Also the maximum skill points you can manually put into one element is 100, you have to boost it by your gears from there. Actually I'm not entirely sure if 80% is the max, but that's what most of people say.

 

147 skill points is 80% I believe, however 80% isn't a hard cap, and you can go above it if you have more sp then 147

 

but it cuts off barely 1% further at 150 points making it entirely useless

I don't think that it would be possible to get that.
Getting a skill up to 100% would require about +200 skill points in one area. Probably impossible.

It would not be impervious to this. The elemental defence with this build isn't super high. You'd have less than 600 elemental defence per element on average.
