Are crafting professions easier than gathering to level?

Gathering professions get hellish pretty quickly. Last time I tried them, I stalled out around level 40; triple XP weekends (octuple, with a profession xp and speed bomb, as I had for probably five cumulative hours? maybe more?) managed to push them on a different account up to 65-75 (those were my targets, I wanted good tools to be able to wipe levels 1 and 10 to clear gather dailies and weeklies quickly on my main). I briefly touched one again today and discovered that I'd need to gather 300 Kanderstone to get a single mining level. Which I was not going to do. So I've decided that my gathering skills are firmly planted here.

But is it different for crafting?

I've just tested leveling Scribing from 1 to 10, and it was fairly painless; gathered ingredients for a few minutes on the early shore, put them all together, very effective. But the early levels are always easy. Can you level crafting quickly over the rest of the course? My assumption is you can, but it costs a fortune to buy the necessary materials and ingredients from the trade market... but if I was leveling everything at once, surely a general attack on various level regions would work?

In short: Yes! In full: Yes but not really for the reasons you guessed; because you either need to grind up your gathering and grind tons of high level and high quality materials or spend a fortune on ingredients, there's a massive grind for materials or for cash. If you aren't getting dxp and double speed and on an xp weekend and all that jazz, you're talking about hundreds of each material. Honestly, the worst part is the ingredients though; they are not reduced by gathering speed, they are necessary, and the level and tier matters a ton. If you find them yourself, good luck storing all of them. Also, if you aren't using tier 3s you're massively increasing the number of items you need to make. If you buy them, that's a fortune. The more you spend, the quicker it will go, but unless you're buying a (not small) fortune in tier 3 materials and ingredients, it's still a grind. I'm unwilling to do that so I can't say if that's still a grind, but it probably is.

So, the subsystem of the system designed to waste your time wastes your time. Makes sense. I won't bother with it then.

Hi! I was just reading this and wanted to know if it is common for players to craft items for you? if so is there any specific place you can go to (disc, forums, party) where that could happen. Else I might just do what OP did and just not bother with crafted items.

Discord people often help, you can also ask around in your guild if you have one. Be prepared to provide materials or compensation, though.
