I’m interested in starting a new character to prepare for the upcoming update, and I want to try something other than Archer. I enjoy Archer because Trapper is extremely fun, and I like that I can swap to Sharpshooter when I need a more meta build. What other classes have fun, more specialized archetypes to lean into, while still having at least one build that can handle endgame content? Any insight would be greatly appreciated thanks!

I'd recommend warrior or mage, because they'll allow you to get into loot running, a major money and mythic making method, and are just generally very versatile.

Mage! I've tried both Lightbender and Arcanist, and I found them both interesting to play.
Lightbender: More suitable if you play a bit more passively, peak survivability with great mana regen from the kit itself. Also great for supporting other players in multiplayer content like raids.
Arcanist: Two separate words, "fun" and "spellspam". The core mechanic "Mana Bank" allows practically infinite mana (if you don't miss your spells) for spamming spells. (Dopamine farm imo)

And since Riftwalker is being reworked (almost the entire Mage tree is changed), having a build for it to try it out in the Fruma Expansion update might also be a good idea.
Just opinions though, the best thing is that you find a class you genuinely enjoy playing.
