In my experience, some of the best places are just where the gathering quests for them are
Copper: -560 100 -1554
Granite: -832 100 -1373
Gold: 432 100 -1281

Copper: The Emerald Trail and Nivla Woods are excellent for copper. You can find a trail of copper nodes leading to the identifier near the Emerald Trail1. Additionally, there’s a “rock” in Nivla with a ton of copper ore around it.
Granite: For granite, Pigman’s Ravines near Ragni is a great spot due to the abundance of nodes and proximity to a refinery2. Another good location is above the abandoned mines at coordinates [795, 86, -1242].
Gold: A reliable place for gold is at coordinates [963, 51, -2196], where you can find several nodes to mine.
