Well, it depends on what materials/ingredients you use and what weapon you're using. Regular items are all different so it's hard to compare
Crafting is also a large grind is is pretty much optional, so I'd just recommend going with regular items unless you like the grind

Crafted items usually have better stats, at the cost of having durability and needing to be repaired every now and then, and requiring a really large prof grind if you want to make your own.
I personally tend to see more endgame players using identified items, mostly to avoid having to deal with durability, but some people prefer to use crafteds as well, especially if they're going to be using them for one specific purpose a lot (i.e. crafted loot bonus gear for lootrunning).

Durability is always a flat number, displayed like this on crafted items:

As for stats, it depends. I'd say that at super low levels, crafted items are superior- but I wouldn't recommend putting the time in for items you'll very quickly outgrow. It's really only worth it to craft items at max level, since they can be sold for a tidy profit!

But yeah, back to stats- at level 100 and above, crafted items can get pretty crazy, like this ring. There are of course the Mythic mockups people create and awesome LB/LQ gear, but in general you'll find superior stats on identifiable items. Plus, the grind is absolutely insane from what I hear- I really don't recommend committing to that unless you have cleared your schedule for a whole month!

If it was blue, that was probably item effectiveness. You can see that here, this item is at 10% item effectiveness.
    upload_2021-3-19_15-53-27.png
Item effectiveness is only seen on crafted items. As crafted items go below 50% durability, they start losing item effectiveness. Durability degradation and item effectiveness is further in detail explained in this thread: Guide - A Comprehensive Guide To Durability Degration | Wynncraft Forums

Some people also use wynntils, a mod which adds all kinds of features (but it can make things a bit complicated for a new player). One of those features is percentages next to the items name depeding on the rolls it got. This is NOT on crafted items. Here's an example:
    upload_2021-3-19_15-52-27.png
It still has a percentage next to the name, this percentage is the average between how good the identifications are. In general, the higher this percentage, the better the item.
(I say in general because some identifications matter more on items than others and sometimes people want a low percentage roll on things.)

    -----------------------------------
Unless you're comparing them to mythic items (like the grimtrap shown above), items with really high specific identifications, or items with major ids, crafted items are gonna be better.

The problem is, they have durability and lose item effectiveness as you use them, which you have to repair, they're a bother to use.

As for your question, which ones do pro players usually use?
Because wynncraft gets pretty easy if you have good enough gear, "pro" players will try things with really bad gear or no gear at all.

Meta-builds (Which I assume is what you mean, a build is a set of items: armors, weapon, accessories, that stuff.) generally don't use crafted items if they are for combat, but for grinding XP/Looting chests/Doing professions, the best builds use crafted items.

It depends on the type of item you're trying to make. Certain IDs are much more difficult to craft than others, and some are not possible at all. For example, you can give your crafted weapons very high spell damage and elemental damage, while keeping the durability reasonable. However, there are very few ingredients that give high main attack neutral damage, with the highest just being 140, so making heavy melee builds with crafteds is not viable. Also, there are no ingredients that give spell cost reduction, and you can't get major IDs either.

Most of the time though, it is optimal to use a mix of crafteds and identified items. For example, here's a definitely not fully-optimal build I put together recently, using a mixture of both. https://wynnbuilder.github.io/index...9i9i9i4S4S9m910OJ0ty0Qm-Y-Y34160e1g00001004fI

Compared to my current build, it is arguably better, since it has actual HP sustain and more EHP, at the expense of a bit of damage. https://wynnbuilder.github.io/#5_0u...0Qm001B2M17001g10009I1001fI10009I10009I1004fI
