You can delete unwanted quest items by placing them in your crafting grid and filling your inventory with emeralds, then closing your inventory

You can also put all the old quest items in bank and then create a new class then take all the quest items and delete the class.

I've found that filling up my inventory then opening a Loot Chest to dump the quest items in works. Bear in mind that you'll need to split a stack of items (Emeralds works fine) and place the second half over the quest item, so that you are now dragging it. Plonk the sticky quest item into the Loot Chest then close it, and viola! It's gone until you use /fixquests.
