I want everybody to look at line 2 and 3.

For line 2, I'm sure we all know what a Trident is. This is an item added in 1.13.
For line 3, some of you might know, the firework's namespace changed from fireworks to firework_rocket in 1.13.

What does this say? This says that, the reworked quests in 1.20 might be done in 1.13+. Or, the reworked quests were submitted in 1.13+ and the devs converted it to 1.12, but forgetting to change some of the sound names.
Regardless, you'll lose a bit of sound effect if you do them in 1.13- (I personally play in 1.12.2 cuz Wynntils are cool, that's why I noticed it).

Honestly, your choice. 1.16.5 isn't too bad clientside, and gives you access to numerous performance mods, but does have a few annoying bugs, and isn't too great serverside. 1.12.2, on the other hand, is great serverside, and has Wynntils, a mod for Wynncraft that makes it around 200% better. You can't use most performance mods in 1.12.2 tho (like Lithium and Sodium), and as mentioned previously, you might not see a few of the particle and sound effects.

Like this is not uncommon. In 1.12, you can see Illagers and Parrots even though the game can be run in 1.9. Though not too many new things are there post-1.12.2 since most people use 1.12.2

Completely possible, and it wouldn’t make the resource pack terribly heavy. It will be no worse than the 1.13 resource pack

 

Yeah, there's a resource pack I found that just gives vanilla sounds from every Minecraft version. You can just apply alongside the server pack and have all the sounds from 1.16 playing while using 1.12.

I'm pretty sure the one I used was called Vanilla Template, but for some reason it was either deleted or taken down on CurseForge. I'd reupload it but not sure if that's allowed on here or if I even can because of not being able to post links.
