if you manage to do this I feel that you deserve some kind of award. You are attempting to create a huge project on a programming language that has no reason to be called a programming language. No if statements, no loops, constants don't exist so you can't even do 1+1 without needing 3 variables. Variables are linked to entities so you need to make sure that that entity is never killed. Not to mention being several thousand times slower than java. Python is blazingly fast compared to commands. Operations in java that take a few milliseconds will take well over a minute.

It's totally possible to do, but extremely tedious. Mage is going to be a pain

Anyways, i would advise you to not use iron golems, and rather use armor stands with the invisible:1 tag

I (hope) your using datapacks? If so, honestly it won't be impossible, just not fun. Also yes, you can make GUI's with command blocks to have fun.

 

1.16. Also iron golem is there to detect left clicking (damaging), so can't use armor stand. I wanted something with big hitbox.
