    servers restart literally at the worst moments like when I'm in a dungeon or smth it restarts, wastes a key, and brings me back to the entrance like wtf

    It only restarts the dungeon if you're at the boss, and it always warns 10 minutes in advance

    Also @Meshy just download a mod named wynntils - it lists the server up time in the server selector, so you can just choose the server with the least up time.
