Each class has a set of different profession levels.
Professions are split into two categories: crafting (armoring, tailoring, alchemism, cooking, jeweling, woodworking, weaponsmithing), and gathering (farming, mining, woodcutting, fishing)

Your level in gathering professions determines what level materials you can farm. Your gathering profession goes up as you gather more materials. Materials closer to your gathering level give a more substantial amount of experience.
Every 5 levels you either unlock a new gathering tool that gathers faster and has more durability (tiers 1,2 can be bought for emeralds and the rest are from dungeons), or you unlock a new resource that can be gathered.
Each gathering profession has 2 different materials that you can collect from it, depending on whether you harvest with left or right click. The different materials are used for different crafting professions.

Each crafting profession requires 2 different gathering materials to create items in that profession. To find out what materials are needed to craft what items, take a look at the workstations in any city (detlas is easiest because they are all very close together). As you level up, you unlock the ability to use higher level materials and ingredients. The higher level your materials are, the higher level your item will be.
Ingredients are what add different identifications to crafted items. You can only use ingredients that match the level of the item you are crafting. For example, if I have a level 20 ingredient, I cant use it on a crafted item that is being crafted with level 10 materials.
When leveling up crafting, it is highly recommended to use lots of cheap ingredients (0-star ingredients) when crafting, because they increase the experience output a ton.
Most Ingredients can be obtained from mobs, chests or quests. Ingredients also can decrease consumable duration, or item durability. As you use your crafted item, your durability will degrade. You can repair your crafted items using repair scrap. Repair scrap is obtained from the blacksmith.

Overall, professions are not recommended to be done in the lower levels. It will be much more fun for you to just level up your combat level, and do quests, dungeons and more.
But crafted items can be extremely powerful, even rivaling mythics occasionally. That is why many people like to level it up after they get into late game, because it opens up a huge number of possible options for different builds.

I did leave out some of the small details in that explanation (skill points from crafted items not affecting requirements, ingredient effectiveness, different ingredient tiers) but you won't need that if you are starting out.

    Good luck!

So, I’m level 40. Should I start leveling it up now?

I strongly recommend against leveling up professions before you get to level 90~.
At level 40, you might be able to craft items that are a little stronger than the items provided, however - that would
    a) Require a ton of grinding to keep your crafting levels up with your combat level
    b) Require a ton of grinding to find the ingredients to make said item
    c) Because of how quickly you level up at level 40, you would very quickly have access to better items after leveling up, making your crafted item useless (because no one would even buy it on the trade market).

So although wynncraft tries to make it seem like crafting is an essential part of leveling up a class, almost everyone in the community agrees that it is best for you to decide if you want to level it up, only once you reach endgame.

If you really want to do professions, wait until you have completed a Hunter’s Calling and then do a new class on hunted mode.
