Can someone explain to me the process for how they place the bottom half of the sunflower block for use as vines as seen in Nivla forest? Attached is an example of what I'm talking about.

in all seriousness, most likely jpresent messed with some of the physics of the blocks to create that. ive tried to recreate that sort of thing a few million times with no effect

I'm just guessing here, but if you're saying it's impossible to cut the bottom part of a sunflower, maybe there's a whole sunflower there, but the top part is just invisible somehow?

Not a good explanation, I know... I wonder if they'd ever do a Behind the Scenes on Wynn someday?

You start out with a basic block, like a redstone block or something like that, and then use world edit commands to replace the block with the bottom half of sunflowers. The command would be //replace 152 175 Note that if you cause a block update next to it all of the sunflower blocks will be deleted.

I have tried this and the blocks simply break instantly and drop sunflowers. Have you guys made any changes to block physics that would affect this sort of thing?
    ________________________________
there is a separate block ID for the bottom half of the sunflower, but whenever I try to use worldedit to replace another block with this ID the blocks just disappear and drop sunflowers

If you are doing this on a single player world you could try /gamerule randomTickSpeed 0 and try it again. You could also type /setblock ~ ~ ~ minecraft:sunflower

/setblock and turning RTS to 0 yield the same result as before

This is only possible on a server that has block updates disabled, I think we have our own plugin, but the one I'd recommend is PhysicsToggle.
It is however afaik not possible to do on a single player world

Does this make it impossible to use in a singleplayer map even if the map is built in multiplayer? Will the blocks stay placed if you turn block updates on afterwards?

Once the blocks have been placed they only update if you cause opdates around them e.g. placing or breaking a block next to it
