    I was wondering if I am able to change my Warrior class to a Knight, since the abilities are all purely cosmetic.

    I bought the VIP today, and poked around, but there was no option to.

    Sorry, you are not able to reconfigure an existing class. I agree that everything is just cosmetic, but you can't. By getting VIP, VIP+ or HERO, you get the extra classes, but have to start them from lvl 1.
