    I am trying to craft a ring but apparently it requires a copper gem. Where do I even find/craft these gems?

    You have to gather copper ores, take it to an ore refinery, and right-click to refine it into copper gems. You didn't ask about how to get oils, so I'm assuming you already know how gathering works

    After mining copper, you have to RIGHT-CLICK in the refinery to get gems. The same goes for other resources where you can get different materials.

    When I refined the ores I always got ingots. Am I doing something wrong?
