    Is there a way to disable Relend or any person/NPC in an escort quest to stop them from fighting? Because
    there are too many mobs and he's trying to kill all of them and he's dealing hardly any damage while I'm just trying to go through the quest and frankly, I'm not efficient at knocking mobs out either.

    You can just ignore it, there are certain triggers that will automatically teleport him to you for dialogue. This behavior is just something to do with blue mobs' AI.
