One thing that could be possible about the flying is extreme lag. Could be your connection, his connection, server lag, a lot of different things, also he might have been using a spell, and lagged mid-air.

Also you can become invisible, but it's a visual bug that was in older minecraft editions, usually restarting the client will make them visible again, at least for me
I encountered the invisible glitch a couple of times on larger servers in Player vs Player combat, and I've seen it used against me.

However regular mobs are able to locate you
