genuinely so confused, last i played was right after the skill tree revamp thing so I've got all that to learn too, lvl 80 assassin is my main. is it worth restarting on a diff class just to learn everything new or can i feasably learn it all.

It might be best to start over from the ground up, warrior and mage are typically the easiest but you can try to level another assassin.

the skill tree has 3 paths
just follow one and spend your points
and then read what you picked and try to understand what it does
you dont need to make a new class just because of the skill tree revamp
you can always change it later

i'm considering starting over on a warrior i think, ive watched some wynn videos and it seems that warrior is fairly common and good, is there a most efficient way to play to get to my current point fast?

I'd recommend that you start over. A lot has changed in Wynn, and it'll be good to take a fresh start. Warrior and Mage are the easiest classes.

Personally, I had a great time playing through on my Lightbender Mage. It performs very well for quests from the 1-105 range. Admittedly, I was collecting Morph items for my gear throughout that run, and without Wynntils you can't do that anymore - the Fruma update made set items no longer sit in their own rarity. That's not a big deal, though.

Note that Lightbenders do very poorly in the most recent Fruma content - the bosses are designed to punish sustain builds, so they are all brutal slogs. Mage still has two other archetypes, and Arcanist is heavy DPS.

...I can't offer archetype recommendations very well because I've only ever played a Lightbender. Well, and a Sharpshooter I guess. God knows what's going on with Archer archetype balance these days.
