Question about hunted mode..

What assasins usually have negative defence in? Its a pain sneaking up on them while doing professions and not one tapping them with a meteor

 

every class has a passive defence stat but I think you want to know about elemental defence which is item dependent.
different armor has different defences

 

Gather sets are typically quite tanky with very good thunder spell damage but they don't give any elemental damage, just increase your own damage or use a poison build

 

I was thinking more along the lines of "what I a common negative elemental defence for assasin"

 

crafted armor profers use don't have elemental defence unless the add a tiny bit by powdering it.
crafted armor does give a good amount of hp

All depends on the build, the combination of items is what gives elemental defense/weakness

There's too much variability in builds to answer such a general question
