There are 8 crafting professions, and you can craft 2 to 3 types of items with each. Every item requires materials to craft, which you can get from woodcutting, mining, farming and fishing (you'll know when you can gather something if there's a hovering text over it, e.g. "Wheat, Farming lv. min 1", or something like that). You can get two different things from one crop or ore by either left or right clicking on them. The game will tell you which gives you what. For the items themselves, you can see what they require if you hover over the checkmarks in the crafting stations. Materials are the base of items, but don't give id's (e.g. spell dmg, loot bonus etc.). You can get these id's onto your crafted items with ingredients. You can put 6 ingredients onto one item, and depending on how they're arranged, the resulting crafted item will be different.
Crafted items have durability, this means that if they're used, their durability will go down. When it reaches 50% of the max dura, the crafted's id's will start to decline and worsen, up to 0 durability, where every id is 10% effective (e.g. I have an item with 100 raw spell dmg, and got the item down to 0 durability. Now it has only 10 raw spell dmg.) You can repair crafted items at blacksmiths for scrap, which you can get by turning random unneded items into scrap at the blacksmiths once again.
You can level up both your gathering and crafting professions, and by this you can unlock more and more ingredients, along with stronger materials for your items which means more durability.
With all this said however, lvling up crafting and creating your own items isn't really worth it, as professions are extremely grindy, and only start truly benefitting you at lvl 100-105.

If this is your first playthrough dont do profs. They are very long and tedious. Just progress in the game once you in late game like level 95, is when you should start, or alternatively do lootruns

If you are interested in testing the waters with crafting I recommend trying one of the consumable crafting skills like alchemy, cooking, or scribing. Remember to use ingredients while crafting for a significant xp increase.

If gathering is slow invest in a gathering XP set and wait for Prof bombs. Even still though late game it can take several hours for even a single level.

Yeah, just don't do professions unless you REALLY want to.
