Also @Princess Abigail a mary sue is a character who is just WAYYYY too op to a point where it is terrible. Examples include...

1. Everyone Likes them!
2. Can beat all that stand in their way with barely any training
3. The plot must cater to them
4. Anyone who disagrees with them are terrible people
5. Have NO flaws (Clumsy is not a flaw)

You get the idea. Contrary to popular belief mary sues are not limited to just girl Characters but guys as well. A famous example would be goku

 

So basically the last few starwars films

 

Actually the new starwar films (rey) is a prime example of a mary sue

1. No prior skills
2. No motivation
3. Able to take down a TRAINED sith lord with ease

ALL IN THE FIRST MOVIE

Well thats the Villian Sue.
They have an "excuse" to be overpowered only to have a very easy weakness

 

As in the people attacking the boss

 

Exactly, when I made Midas I realized he was a sue so I fleshed out the character and made him lose to draw him away from Sueness

 

Rey is not a Mary Sue and I will glady argue this point with you.
While I don't have much of a defense for how she's able to expertly pilot a ship (maybe years of scavenging out in the wastes taught her some things) she clearly experienced in combat (indicated by the staff she carries around a weapon) and parkour and possibly gymnastics (free style parkour would no doubt be a requirement for the scavenger job when you're maneuvering around large ships). She doesn't get an immediate graps of her force powers but she no doubt heard stories of Jedi in the past and about stuff like the Jedi Mind Trick and wanted to try it out for herself upon finding out she can use the force. It takes her a few tries to use the Jedi Mind Trick on the guard by she gets it through perseverance and possibly luck, not because she's a perfect angel.
Her motivation throughout the movie is to not get killed by the First Order who were hunting her down on the grounds that she was a force user and Kylo Ren wanted to "talk" to her, find out about her parents who she recieves a vision if by touching the lightsaber, and by the end of the movie she wants to train her force powers and maybe possibly become a Jedi which is why she seeks out training from Luke.
And lastly, Rey kills nobody over the course of The Force Awakens. Her fight against Kylo Ren ends in a draw because the planet literally started to crack in half during their fight. And if you're referring to that bald guy that gets killed in The Last Jedi that supposed to be the new Palpatine or whatever, Rey didn't kill him, Kylo Ren did.

Also, I slightly disagree with this definition. What makes a Mary Sue isn't so much how overpowered they are, but rather the flawless perfection of a flawlessly perfect character. Honestly, the examples you give for the qualities of a Mary Sue much better explain what a Mary Sue is then the actual explanation you offered.
