Back when I used to play before the Economy Update, grinding would go as follows:

Collect all items (usually rare and higher)
    Identify them
Sell at an item buyer for a profit

But as I've come back to the game, it seems as though identifying items cost more than what they sell for at the blacksmith. Is this just a low-level problem? Is this still the way people grind? If not, what is?

Also, is crafting really a better alternative to just using regular items?

    Thanks in advance :)

Yeah, blacksmith prices did lower. You'd have to sell to other players to make a profit. (which is annoying, especially when it incentivizes players to just drop lower-tier gear)

Lower tier as in lower level or quality as in even rare items?

I thought they would have raised prices from the blacksmith to help the economy however that would work.

The economy-affecting parts of the economy update were uh... yeah. When blacksmithing items at endgame, uniques and rares are net even, and legendaries are net loss of about 1 EB.

adding onto this, you do get some emeralds for selling unidentified stuff to the blacksmith. Not that many, though.
The white-named normal items are actually worth more than unidentified items.

so to make money from a blacksmith:
normal > any tier of unid'd item.
    id'd item < unid'd item
This stays true for the whole game.

I'd still suggest you to id any legendary gear though, since you can make some pretty good money with the ingame player market.
After lvl 80 alot of rare gear also becomes quite wanted. It's also quite fun to id an item.

People mostly grind for emeralds using endgame lootruns and identifying what they have to then sell it. You can also farm emeralds at seavale reef for some profit. Certain ingredients are worth quite a bit as well, but I don't know much about that scene.

Crafted items can definately be stronger than legendary items and are a little less powerful than mythics, but a lot more flexible. Keep in mind that the durability which crafted items have can be a real pain. If you play around with them a bit you can see if you like 'em or not.

    I assume you're https://wynncraft.com/stats/player/oHybrid
So to show an example of the strength of crafted items I'll try to create something similar in power to diablo, a lvl. 58 legendary wand.
This is what I quickly made: https://wynndata.tk/cr/539891519 . When you put them side to side (in a build with just these wands.) A perfectly id'd diablo has 449 melee DPS and 1292 dmg meteors. The crafted wand has 768 melee DPS and 2110 dmg meteors. As well as more powder slots.

Please note that this is using T3 materials (which increase the durability and are grindy to get) and T3 ingredients (which are most of the time pretty rare to get.

Overall I'd suggest using non-crafted items until you want a specific build. After that it's up to wether or not you want to keep repairing your crafted items.
