    That horse is a protector mob. You'll get a rideable horse after finishing the quest.

    The only horses you can use are horses given to you from the quest mentioned above, or buy it. And yes it does come with a saddle.

    Your horse should say ‘(Username)’s horse’ above it. Anything with a level in its nametag is a mob and can’t be interacted with.
