I left the tavern after I couldn't pick up on anything, so I've been there for at least a few minutes....
Then again, not actually ever meeting whoever you're talking to means that we wouldn't recognize each other... works for me.
(Bonus: I haven't actually read what happened the few days I was gone, so other than them being bandits, I am legit confused)

Actually, the bandits and the mercenary are different things. The mercenary is going to help kill a serial killer hiding in a mineshaft, actually.

I go closer to the fancy guy pretending to look for something in my satchel but at the last second I draw back my bow and shoot an arrow at the thief

I just shot the horse so and gave sime berries to it so my bow, so my bow is probably in my hand or on the ground next to me

You're not in combat. It would, realistically, take at least a little time to grab and load the bow.
