Is there a certain level your guild has to be in order to claim more territory. Or can you just claim as many as you can take-over?
please respond if you know the answer.

Your guild can claim as much territories as you can get, there's no limit of level or anything for this. The problem is defending the territories you conquer.
Yes, you have to do a guild battle and kill all the mobs that have been put in the territory for defense from the other guild. Or you can be so lucky to find a territory without owner or defenses and just claim it without any battle.

To start a battle for a territory, someone with the rank of captain, chief or the owner himself have to go in the territory you want for your guild and do /guild attack. A message in chat will tell you how many mobs are defending it (it can be up to 1000 mobs max) and you have to confirm the attack by writing yes on the sign that will appear in the middle of the screen (it's basically writing on a normal sign like in minecraft).
From that moment, a timer of 3 minutes will start, and your other guild mates have those 3 minutes to get into the territory before the war starts. those who aren't in the territory won't be teleported to the war server and won't participate. It should work if you are in different servers too, but to be sure, get everyone on the same server.

When the guild war starts, the mobs that defend the territory will gradually start spawning, kill them until there aren't any more to take down the defense of the territory and claim it for your guild. At this point you will be teleported back to the main lobby, enter a server and do /guild defend while in the territory to open a menu where you can choose what mobs to buy and put into the territory for defense.
The level, strenght and price of the mobs you can purchase will go higher as the guild levels up. To buy them, you must have the emeralds needed in your guild bank, you can add money to the guild bank with /guild contribute, but remember that there's no way to withdraw them back. Every territory you own will give to the guild a part of the xp made by the players that are inside it and an Emerald every minute.
