Can you give some examples and say what's wrong? With this information I might be able to help you out.

lets say i wanted to recreate a wolf.
every time i try to re create the wolf, its a solid texture except the details on the face.
when i add the texture to minecraft, its bland and un-interesting.
here is an example from an old unfinished project:

please note this will not work on a vanilla wolf, as i have a custom model for it.
how do i add the texture/fur details?

Take a look at the original wolf texture and use some of the shadows/coloring in your texture.

EDIT: Upon further inspection of the wolf texture, there is a variation of shades of grey used to add "texture" to the fur. Try doing this, but keep in mind that too much variation of colors can make it look bad.
