    An actual legitimate amount of fun stuff to do in survival instead of spending hours looking through caves for diamonds, and then another few hours looking through the nether for a fortress. I'd also make all the cool biomes and locations (mesas, ice spikes, etc.) more common so you don't have to waste an entire week looking for a third of the game's content.

    That's it I guess. Creative is pretty much good enough since there are so many decorative blocks.

    Fix axes as weapons, and make them able to get looting, knockback and fire aspect through enchanting, and also allow it to be via just normal, not using books.

    And more structures.

    More general diversity. Underground lake biomes, volcanoes in some areas, small, almost meaningless mobs, that still add something to the game that makes it feel more alive. Birds, for example, or maybe fish that actually swim around. The odd oasis in the desert biomes, anything to make the game feel more alive in vanilla worlds.
