if you mean just LE, it's around 30 to a stack.

If you mean adding all the emeralds together, I'm guessing around 60 stacks.

 

i meant like only receiving LE from quests, not emeralds that become le

 

Well you kinda have to count EB, and if you add master piece and ultimate weapon, you get around 2 stacks. I said this before when talking about how screwed the market is because of gavel

I personally added all of the quest rewards from the wiki to try to get a definitive answer. What I ended up with was in total 336,241 emeralds (about 82 LE), half of which comes from the last 20 quests.

Of course, this may vary depending on a variety of factors such as "split" quests like An Iron Heart Part II, or whether or not you take holiday quests into consideration. I also doubt my calculations were 100% spot on, but I couldn't imagine my number being more than a few LE off.
