    'We were once rich' could refer to humans but you have said that it isn't... could refer to zombies maybe?
    Then we have 'known all over the realm'. This could refer to Bob but I'm not sure it does.
    'But now we're in a ditch'. I have not seen a ditch, but it could mean that 'they' are forgotten, which could also mean Bob OR the humans who became zombies.
    Finally 'our souls forever restless' could also mean Bob or zombies.

    I'll go with the miners who dug out the emeralds, because they became rich, were praised, then they became zombies and were restless, forgotten and when they died rotted away. Really not sure about this riddle XD.
